Thishelps retain the juices when the meatis sliced.– The larger the cut of meat to beroasted, the lower the temperatureshould be. The roasting process willtake a little longer, but the meat willbe cooked evenly and the outside willbecome crisp.– Use a roast probe for accuratecooking temperatures and bestresults.
Roast78Wireless Roast ProbeThe wireless roast probe enables theroasting process to be monitoredsimply and reliably. It can be cleaned inthe dishwasher. How it worksThe metal tip of the wireless roastprobe is inserted into the food. There isa temperature sensor in the metal tipwhich measures the core temperatureof the food during cooking. The temperature sensor is locatedapprox. 3/4" (2 cm) from the tip. Insertthe wireless roast probe so that thetemperature sensor is positionedcentrally (see "Important notes aboutusing the roast probe").The rise in the core temperature reflectsthe extent to which the food is cooked. You can program the core temperatureto be lower or higher, depending onwhether you want your meat to be rare, medium or well done.A core temperature of up to 210°F(99°C) can be set. Please refer to theroasting chart and "Slow Roasting" forthe core temperatures applicable fordifferent types of meat. The cooking time will be similar whencooking with or without the wirelessroast probe. The core temperature value is sent viaradio signal from the transmitter in thehandle of the wireless roast probe viathe antenna in the back wall of the ovento the appliance's electronic unit assoon as the food with the roast probe isplaced in the ovenUninterrupted transmission of the radiosignal is only possible with the doorshut. If the oven door is opened duringthe cooking program, e.g. to baste themeat, then the radio signal isinterrupted. It will resume once the doorhas been closed. It will take a fewseconds for the current coretemperature to show up in the displayagain. The temperature sensor will bedestroyed at temperatures above212°F (100°C). Inserted inside thefood, there is no risk of damagesince the maximum adjustablecore temperature is 210°F (99°C).If you are not using the wireless roastprobe, do not keep it in the ovenduring cooking. Always put it backinto the storage sleeve in the frontframe of the oven.
